Blueberry, ginger lime mint caipirinha

Traditional capirinha is made with cachaça and tangerine lime and sugar, not tangerine. It was a late posting and you can see I was sampling the product earlier. :-P. Thanks to Brazilian Girl for the catch. I’ve been served a multitude of variations. Here’s my contribution to the mix and I am sure this libation is going to appear again and again throughout the Summer. It’s premiere appearance gave my sister and C a nice buzz. ;-)

Ingredients

Blueberry, ginger lime caipirinha3 limes juiced or to taste
1/2 pint of fresh blueberries
2″ piece of fresh ginger
1 good handful of ginger mint leaves. traditional mint leaves can be used as a substitute.
1/3 cup of honey or to taste
28 oz. of sparkling mineral water or club soda
3 oz. of quality vodka or to taste
crystallized ginger for garnish

Preparation

1. Juice the limes into a large glass pitcher.
2. Peel the ginger and smash it to loosen up some of its flesh. Add to the pitcher.
3. Add the blueberries and ginger mint leaves and with a wooden spoon, mash the berries, ginger and mint leaves.
4. Pour in the honey.
5. Add the sparkling water and vodka and stir well.
6. Place some crystallized ginger into the martini glass and pour in the goods.

Grilled Scallops with ginger, soy dressing and sea beans

This recipe was part of a, Food Play -1 series and is the Asian/Japanese entry. Grilling the scallops gives them a smoky, sweet flavor that contrasts nicely to the sea bean’s inherent salty sea tasting crunch.

Ingredients

Grilled Scallops with ginger, soy dressing and sea beansScallops:
3 large day boat Scallops
1 1/2 cups of sea beans

Sea Beans:
1 1/2 cup of sea beans

Dressing:
1 TBs. sesame oil
1 tsp. minced ginger
2 TBs. dark soy
1 TBs. cilantro
2 scallions

Preparation

1. Preheat your grill to high and bring 2 cups of water to a boil. Do not add salt to the water because sea beans are naturally salty. Season after they’re blanch if desired.
2. Brush the scallops with dressing.
3. Place the sea beans in the boil water and blanch for 2 mins. Remove the beans and shock in an ice bath or very cold water to stop the cooking. Strain and set aside.
4. Pour about 3 TBs. of the dressing in a small bowl. Place the scallops on the hot grill and after 1 minute. Dip the grilled side in the dressing and set back on the grill for another 1 minute. Repeat on the other side.
