Applewood Smoked Bacon Wrapped Beef Fillet

Applewood Smoked Bacon Wrapped Beef Fillet

Sometimes…I just get those cravings. What I loved about this dish is the smoky, grilled flavor of the fillet and bacon contrasting against the sweetness of the mint pea puree. It’s also great that this dish comes together quickly and easily. Whenever I grill beef and don’t have pan drippings to make a sauce, I [...]

I was chatting with my brother this weekend about the blog and he described this panini to me. He had eaten it at a joint in Chicago and had made the dish for my mom and sister not too long ago. So…I thought I’d give it a try. I normally make breakfasts on the weekends [...]

Cheesecake …again!

I just had to. This post is a blog and email inspired entry. While reading Will Work For Food, I saw his posting of what he did with some extra strawberries and hit him up with my mascarpone cheesecake recipe.
WWFF said, “I bet that’d make a great cake if placed on top of mascarpone cheesecake!”
I [...]

This recipe is a lil tweak of Jamie Oliver’s. In his book, Happy Days with the Naked Chef, there’s a section of “Quick Fixes” that have a perfect collection that are quick and tasty. Served with a small side salad of mixed greens and all is good.
Ingredients
1 lb. of Cod fillet, skinned and pin-boned and [...]

A wonderfully flexible salad that has a medley of flavors. I wouldn’t hesitate to switch out the tuna with beef. Fillet anyone?

6 tablespoons extra virgin olive oil
Kosher salt
Freshly ground black pepper
Fresh thyme leaves, minced
1 medium onion, peeled, trimmed, and sliced
3/4 cup Nicoise Salad Dressing, recipe follows

Fish, chicken, beef…this tapenade is great with so many things. I’ve used it for a bruschetta, on top of eggs and in salads.
Ingredients
1 cup of Nicoise olives, pitted
1 cup of Picholine olives
1/4 cup of sun dried tomatoes stored in oil
1 TBs of capers
3 garlic cloves
2 anchovy fillets
1/2 TBs of chopped fresh basil leaves
1/2 TBs of [...]

Ahhh…sitting here enjoying the beautfiul sunshine. A glass of Hoegaarden by my side and ready for the next post. As you can see from my previous desserts, I’ve been on a mascarpone kick. Well, it’s still kicking.
You’ll see that this recipe doesn’t use as much sugar as traditional recipes. Mascarpone, the Italian version of cream [...]

Monkfish with Sauteed Spinach and Long Grain Brown Rice

Monkfish with Sauteed Spinach and Long Grain Brown Rice

Ever since my fish guy started offering only farm raised Tilapia, I’ve started using wild caught monkfish as a substitute fish. Yeah, monkfish has deeper flavor and thicker texture but I think if often works well as a stand-in.
In a pinch, I often make this dish for a quick weeknight dinner. Sans the rice, this [...]

I’ve been trying to make it a habit of using my leftover items from other recipes. I had an extra Black Krim heirloom tomato sitting on the counter and it had me thinking of how I could use it. What I love about heirlooms is the variety of flavors they offer. I picked up 2 [...]

So…better late than never? We actually had our dinner 2 weeks ago and I have been promising to put the pictures and recipes up since then. But if you look through the blog, you’ll see that I’ve been busy cooking and drinking.
Where’d this idea come from? Actually, a suggestion of someone very close to [...]
