Open face Asian Pear Panini with Gorgonzola Chees & Thyme Honey
Posted on 21. May, 2007 by singleguychef.
I was chatting with my brother this weekend about the blog and he described this panini to me. He had eaten it at a joint in Chicago and had made the dish for my mom and sister not too long ago. So…I thought I’d give it a try. I normally make breakfasts on the weekends [...]

Cheesecake …again!
Posted on 21. May, 2007 by singleguychef.
I just had to. This post is a blog and email inspired entry. While reading Will Work For Food, I saw his posting of what he did with some extra strawberries and hit him up with my mascarpone cheesecake recipe.
WWFF said, “I bet that’d make a great cake if placed on top of mascarpone cheesecake!”
I [...]

I was wondering why no one was signing up for notifications, after they had gone to the page. I was just “notified” that there was no form to fill out. Not sure what happened there but many apologies. The previous form has been fixed.
For safe measure, here’s another one

Baked Cod with Avacado, Shrimp, Cherry Tomatoes, Cream …oh my!
Posted on 17. May, 2007 by singleguychef.
This recipe is a lil tweak of Jamie Oliver’s. In his book, Happy Days with the Naked Chef, there’s a section of “Quick Fixes” that have a perfect collection that are quick and tasty. Served with a small side salad of mixed greens and all is good.
Ingredients
1 lb. of Cod fillet, skinned and pin-boned and [...]

Mascarpone Cheesecake with Roasted Macadamia Nuts & fresh Strawberries
Posted on 13. May, 2007 by singleguychef.
Ahhh…sitting here enjoying the beautfiul sunshine. A glass of Hoegaarden by my side and ready for the next post. As you can see from my previous desserts, I’ve been on a mascarpone kick. Well, it’s still kicking.
You’ll see that this recipe doesn’t use as much sugar as traditional recipes. Mascarpone, the Italian version of cream [...]
